Eunuchs aren't the same as trannies. Enuchs cut off their genitals, not because they had "gender dysphoria" but because they wanted to be free from lustful desires, the motives aren't the same.

We have thousands of Greek manuscripts and they all align. The versions of the Bible we have today are based off those manuscripts.

You fundamentally misunderstand gender dysphoria if you think eunuchs (who mainly existed in the form of removing the gonads, not amputation of the penis) is a totally removed state from a modern dysphoric. Jesus even lists 3 different reasons some might become eunuchs.
Those greek manuscripts being consistent does nothing to change the overall composite nature of even the oldest parts of the Bible, Genesis is likely compiled from 4 different sources that each refer to God by a different name.
